This chillable red is a field blend of 70% red and 30% white grapes grown on granitic soils and hand-harvested in early October. Fermented with wild yeast in amphorae, with a touch of ground chestnut flowers—an old monastic winemaking tradition—for natural stability. Aged two months in amphora, unfiltered, with just 15g/L SO₂ at bottling.
Tasting Notes: Juicy dark berries, tangy plum, and a savory earthiness with a subtle herbal snap. Bright, rustic, and totally gulpable—best served with a chill.
